The launch of Santa Maria Amba Mango Sauce, Aleppo Pepper Paste and Baba Ganoush enables operators to refresh menus, without increasing labour costs, specialist skills or ingredient complexity.
With 74% of diners looking for new flavours when dining out2 and 89% finding Eastern Mediterranean appealing3, the opportunity is clear. From adding a new sauce to a familiar dish or creating an entirely new menu item, the range offers flexibility across dayparts and menu formats.
The three Santa Maria products are:
- Amba Mango Sauce– made with four to five mangos per bottle, it combines fruity sweetness with fresh acidity. Ideal with fried chicken, falafel and wraps, it can also be used as a dressing, glaze or mixed into mayonnaise.
- Aleppo Pepper Paste– inspired by Syria and southeastern Turkey, this rich tomato and chilli paste delivers fruity depth with soft, controlled heat. A versatile alternative to harissa or gochujang, it is ideal for bowls, grilled meats, seafood and vegetables.
- Baba Ganoush– a smooth, earthy aubergine dip with sun-dried tomato, basil and a subtle chilli kick. Perfect for falafel pitas, shawarma wraps or as a mezze dip.
Many traditional Eastern Med dishes are plant-based by nature, making these sauces a natural fit for operators responding to demand for vegan options. As all three products are ready to use, kitchens can build vegan-friendly dishes into everyday service without special orders or extra preparation.
Barnaby MacAdam, development chef at Paulig PRO, said: “We’re really proud of our latest innovations, which bring accessible, exciting flavours to the kitchen. The high mango content, at 54%, brings vibrancy to our ready-to-serve Amba Mango Sauce, working particularly well as a topping for shawarmas and open flatbreads.

“The ruby-red Aleppo Pepper Paste can be spread directly onto pita for an easy snack or used to add a punchy flavour to any dish, from marinades to dressings. And Baba Ganoush works beautifully alongside a sandwich or burger as it does on a mezze platter, where it’s the star of the show.”
Paulig PRO has also launched two additions to its Tortilla Toolbox. The new 6-inch White Corn Tortilla and 12-inch Wholewheat Tortilla Wrap provide versatile, high-performing solutions for chefs.
Whether creating Mexican street food, Middle Eastern wraps or fusion-inspired grab-and-go, tortillas are remarkably versatile. Designed for busy professional kitchens, both products can be rolled, folded, grilled and baked without tearing, delivering the strength and consistency chefs need while standing up to bold fillings and punchy sauces.
The new Santa Maria 6-inch White Corn Tortilla is made from corn to deliver the authentic flavour and texture expected from traditional street food. Ideal for tacos, tostadas, quesabirria and other standout dishes, it enables operators to create authentic, premium menu options with ease.
Complementing the range is the new Santa Maria 12-inch Wholewheat Tortilla Wrap. Made with wholewheat flour and containing 8.9g of protein, it provides a high-fibre option. The generous size and soft texture make it a versatile base for dishes from shawarma-spiced wraps and Korean BBQ burritos to classic lunch favourites.
MacAdam continued: “Our recent Taste the Future Flavour Trend Report found that consumers are increasingly looking for exciting global flavours when they eat out. We want chefs to be able to load a grilled curry chicken burrito with all the sauce and spice it deserves, without worrying about it tearing. Our Tortilla Toolbox is designed to give chefs the confidence to do exactly that.”
