With summer here there is no better time to enjoy a beautiful mixed salad accompanied with some gorgeous grilled turkey rashers.

Serves: 10 / Prep: 15 minutes 


  • 300g Mixed Salad 
  • 400g Mixed Tomatoes 
  • 40 Turkey Rashers
  • 100ml Ground Nut Oil
  • 10 Halved Pitta Bread 
  • 50g Butter
  • 10 Mini Goats cheese
  • Pinch of Salt
  • Pinch of Pepper
  • 150ml Olive Oil
  • 100ml Balsamic Vinegar


  1. Prepare the mixed Salad adding the tomatoes
  2. Grill the Turkey Rashers turning occasionally 
  3. Tear & oven bake the Pitta Bread until crispy
  4. Caramelise the goats cheese with chefs blow torch
  5. Mix olive oil and Balsamic Vinegar & season to the dressing to taste
  6. Serve by adding a drizzle of Balsamic Vinegar if required
